Extract ColorMap class from ColorMapPostProcessingStage and use it for diagnostic AOVs

Fixes #2249

I wasn't sure if we want to use the ColorMap class for ColorMapPostProcessingStage as well. Currently, ColorMap is only used in the scalar diagnostic AOVs.
